This was the highlight of our trip, so far.
Karen is a font of information, not only about food but, New Orleans and so much more. The class itself was relaxed and hands-on. She gave instructions and the reason behind them, answering any questions we had along the way. I really enjoyed hearing the science behind why food reacts the way it does when and how you cook it. I probably won't remember much of it but it was really interesting and I can definitely see how knowing the chemistry elevates cooking.
This class is for beginners to great cooks, there's definitely something for everyone, including those who just want to watch (she gave that option at the beginning).
We did the Seafood class and everything was fresh and so good. We were offered leftovers, which we would have taken but since we were all in hotels without microwaves, the bread pudding was all that we could take with us.
I would definitely do this class again.
